The white mushroom most Indian kitchens know. It grows on prepared compost and prefers cool conditions, so in most regions it is either a winter crop or one for climate-controlled rooms. It has a large, established market.
Oyster mushrooms grow on pasteurised straw and tolerate a wider range of temperatures than button mushroom. The rooms they need are simpler, which is why many new growers begin with oyster.
A white mushroom suited to warm, humid weather, which makes it a natural fit for hotter parts of India where button mushroom would need heavy cooling. It also keeps well after harvest compared to many other mushrooms.
